Greek Orzo Salad

Orzo Salad
1 box (16 oz.) orzo
4 bags Celestial Seasonings® Peppermint Herb Tea
1 pint of cherry or grape tomatoes, halved
1 seedless/English cucumber, peeled, seeded and thinly sliced
1 cup crumbled feta cheese (low fat if available)
½ cup Greek Calamata olives, pitted and sliced
1 medium red onion, sliced into slivers
3 tablespoons fresh mint, chopped
¼ cup sliced green onions or scallions, finely chopped
Citronette
2 tablespoons fresh lemon juice
¼ teaspoon Dijon mustard
¼ cup olive oil
2 teaspoon fresh oregano
Zest of one lemon
1 garlic clove, minced
Salt and pepper to taste
Preparation
- Cook pasta in water with Celestial Seasonings Peppermint Herb Tea bags.
- Rinse with cool water.
- Add remaining ingredients and toss.
- Whisk together lemon juice and Dijon mustard.
- Add oil in a slow stream, whisking until emulsified.
- Add remaining ingredients.
- Toss citronette with orzo salad.
- Refrigerate at least 4 hours or overnight.
